I think 8. Nxe5 which relieves White's position with two exchanges is best. Winning a pawn with Qb5 check at the end is plausible but might be risky. In effect this is a Caro-Kann reversed!

Funny mentioning the CK reversed, since at move 8 black has a common setup for white in the sicilian (but white doesn't have the same sicilian setup as black would have.)

looking at 8Nxe5, I would be happy with that, any opening where white is looking to reduce blacks pressure at move 8 says something about the prior moves ;-)

Maybe, but White should probably play b3 and Bb2 and then break with c4, rather than what he/she did. The main danger might be something like ... Bh2 check winning the Queen on d1. So you might have to put the Q on c2 first ... all rather slow. :-(
