Great you are ready to start. Will you post the pairings here or message all the players or just message team captains. Will players post their results?

My role in this will be to hope you get all the luck you will need. You should require each team have a very responsible manager. If it is 7 days per move some games will take a year. A 5 round swiss will take 5 years. Round Robin would be better. All teams play all other teams at the same time. 1 day per move with 14 day bank would be the best time control. Team managers are responsible for reporting results for the whole team. You would be responsible for maintaining the wall chart. Use Queen Alice for all games and communication.
