Yes, e6 can be played against anything, while 1...c5 is bad against 1.b4, but works against everything else.

Watson's book is great and truly the 'bible' for French players, but not the greatest place to start as it assumes you already know a fair bit about the opening already.
I started a thread on this topic at chesspublishing.com a year ago so you could check that out. Sam Collins has a book out on openings and his 7 page section on the French is very good and clear; worth a look if you see it in a bookshop. The same author has a book out in the summer; a black repertoire book using the Fr/Dutch against everything. I'm sure that will be a very intro to the Fr. His Fr Advance book has an excellent intro .... also worth looking at.
But that's the problem - there isn't one good, basic intro to this great opening.
Starting Out: The French. One of the worst in the series; only consider getting it if it's very cheap indeed. (I have this)
Mastering the French: Highly rated, but virtually unobtainable except at insane prices.(Don't have)
How To Play the Fr Defence: ok, but a bit skimpy. Again, if cheap it might be worth getting.(I have this)
Winning with the Fr Defence: Absolute gem. One of my all time favourite chess books; rush and get this before it disappears from the market as the publisher lists it as out of print. Great for middle game plans/ideas.
Just had an idea. MASTERING THE CHESS OPENINGS volume 1 (John Watson) might be what you need. Go to gambitbooks.com and you can view a .pdf sample with 4 pages from the Fr section.
