The King definitely lasts the longest: since the king can never be captured and removed off the board. And when it comes to capturable pieces, I ran some stats in one of my large databases with SCID and the answer is: the queen's rook! Note that this is statistically more probable in games and should not be taken as an absolute answer, as there are some games where the king's rook may survive longer. Also, I have not taken pawns into accout: for 'pawns' are by convention not included among the list of 'pieces' and so deserve a separate candidature.

I'd also say that one of the two rooks lasts the longest, since rook endings are by far the most common. Regarding the pawns, maybe the a or h pawns survive the longest, but this is just a guess :-)
