I think the "good manners" that seigneur refers to can be expressed by this quote:
Hein Donner: "I love all positions. Give me a difficult positional game, I will play it. Give me a bad position, I will defend it. Openings, endgames, complicated positions, dull draws, I love them and I will do my very best. But totally won positions, I cannot stand".
I think we play chess for the fun. When a win is so clear that one side loses the will to play the game because there is no fun anymore, the game loses his natural objective. And it's kind to resign.
I'm not an excelent player, but sometimes I reach positions against better rated players where my win is clear. And they make me play to the mate. I cannot stand it, too.

On the other hand, there are people that resign when there is a lot more to play.
