When your opponent plays Nc3 they can't challenge d5 with the c pawn easily, so I probably would have suggested 2d5 rather than 2e6.
However, if I had found myself in your current position your opponents strongest threat is e4 threatening e5 and eventual kingside pressure. b6,Bb7 is too slow to stop e4e5 so you need to be immediately disruptive. The three things I'd look at would be c5 with a sharp game, d5 with queen bishop issues but nothing majorly wrong (maybe you could try to trade this bishop of with b6,Ba6?), or Qe7?! intending to meet e4 with e5?! which doesn't look smart but does at least interfere with the e4e5 plan.

PS Let's suspend the convo on this position for a little while as one of my disgruntled opponents has coincidentally brought this exact position in our current game. :-O
